I like to think of our pub brewery as a kitchen rather than a factory. I never stop experimenting. Every brew is the result of the culmination of everything I’ve learned about brewing to date. Sort of the way a jazz musician approaches music.
Olsch is the only constant, but even there things have changed. Some beers come back by popular demand, so the name comes back, with a general aim at recreating the beer, but then innovation (and necessity), new ingredients, and fresh ideas are incorporated.
Such is the luxury of brewing in a beer kitchen rather than a widget factory, I wouldn’t have it any other way.

THE thirst quencher! Brewed in the Kölsch style, it’s a refreshing, pale, delicate beer with a lively aroma imparted by Santiam and Perle hops. (4.8% abv.)
A zesty golden hefeweizen infused with a potent smack of Lemongrass. The flavor is crisp, tart and refreshing – World Beer Cup Silver Medal winner!! (5.2% abv.)
Adam Balls’ first contribution to our ever changing lineup of brews. Nicely balanced with a tilt toward the maltier side, brewed with Maris Otter, a hair of Roast Barley, and a whisker of Peat Smoked malt, and then gently hopped with Fuggles. (6.8% abv.)
Richly malted flavor balanced with assertive hop presence. Based on British Maris Otter Malt and a smattering of Crystal Malts, and then generously hopped with Australian Galaxy, East Kent Goldings, U.S. Tettnang, and Apollo. (5.2%abv)
A rip-roaring, rollicking, India Pale Ale that’s brewed with a hefty portion of flaked rye and Carafa II to make it black as Ravens. Liberal hopping with Super Galena and whole cone Centennials and Sonnet makes this ale a kind of strong stout for hop heads. Got to charge an extra buck though, we put a lot in it!(9.6% abv.)
A satiny-smooth and unctuous Strong Ale brewed with Pilsner, Munich and ESB malts, gently hopped with fresh U.S Tettnang, and fermented with Leuven yeast. Try this one with Crème Brulee! (10.5% abv.) 9 oz. pours only.
