    Wine Manifesto ‘Block Pricing’

    Most Restaurants charge a standard 250 – 300% markup on wines regardless of the price.  It’s a strategy that over-inflates wine prices rapidly as the cost goes up.  We feel this dicourages people from enjoying better wines while eating out.  At $6 a glass ($21 a bottle) on our everyday ‘fit to drink’ Chardonnay, we’re satisfied with our margins, but for just $2 a glass more ($30 a bottle), you can get Talbott, Sleepy Hollow Vineyard, Chardonnay.  The deals get better.  Instead of charging a set percentage markup, we charge a set dollar amount in the middle range, and retail pricing at the top end.  The result is tolerable prices at the low end, great values in the middle range, and bargains at the top end.  Where else can you drink Brunello Montalcino for less than $100 a bottle in a restaurant?   We’re not interested in curating a wine museum. We make money on volume and turnover,  and on getting more people in to enjoy our unique Brewpub.
